Ingredients

  • 2 lbs lard

  • 4 lb pork (can do just butt/shoulder or mix with belly +)

  • 1 1/2 Tbsp kosher salt

Process

  1. Rough chop then Melt the lard

  2. Season the pork with salt

  3. bring to vigorous simmer than move to a 300 degrees C oven for about 2.5 hours until tender

  4. Let cool for half an hour

  5. Fish the meat out and rough chop for tacos, save the lard for something else if desired

    Note: If you don’t use all fat here and use water instead, you will want to broil/sear this meat to get it browned.
