Zucchini Bread
Ingredients
2/3 c shortening or applesauce
2 2/3 c sugar
4 eggs
3 c grated zucchini
2 tsp vanilla
1/3 c water
3 1/3 c flour
2 tsp baking soda
1 ½ tsp salt
½ tsp baking powder
1 tsp ground cinnamon
½ tsp ground cloves
Process
Heat oven 350; grease bottom of 3 loaf pans.
Mix shortening and sugar in large bowl.
Add eggs, zucchini and water.
Blend in flour, baking soda, salt, baking powder, cinnamon and cloves.
Pour into pans. Bake until wooden toothpick comes out clean, bake about 60 – 70 minutes.
Cool slightly, loosen sides of pans and remove to cool completely.
To store, wrap and refrigerate no longer than10 days or freeze.
Note: I like to slice it, ~1/2”-3/4” thick, then freeze it. that way I can pull one slice out at a time, throw it in the toaster and smear with cream cheese.
